Thanksgiving Stuffing

1 1 / 2 cupCelery
1 1 / 2 cupWalnuts
2 cupsRaisins
1 cupApplesauce
16 ozStuffing cubes
1 lb.Sausage
1 tOlive oil
1 / 4 cupWater
Instructions:
Preheat over to 375.

Prepare stuffing cubes as per instructions on package.

Cook sausage in frying pan on medium heat; after sausage is fully cooked remove from pan and leave drippings and glaze in pan.

Add a small amount of water to the pan to deglaze it, and a small amount of olive oil to cook dry ingredients. Let this sizzle a little to cook off some of the water.

Season the celery with salt and pepper, then add to frying pan to sweat it a little. Next season and add the walnuts, sweat them, and then season and add the raisins.

Through the sausage back in the pan and combine. Remove from heat and let stand.

Put the prepared stuffing into a large bowl, add the frying pan mixture, and pour applesauce on top. Combine all together by hand.

Place stuffing into greased casserole dishes, packing it in slightly, being careful not to pack too much.

Bake in oven at 325 degrees for 45 minutes to an hour, or until a crunchy crust has formed on the top of the casserole.

For interesting changes of pace, try different dried fruits in the stuffing (apricots, cranberries, golden raisins). Add some fresh ginger or garlic during frying to spice it up a little.
