Pomegranate and Green Papaya Salad with Ginger Dressing

3 large pomegranates

3/4 cup lime juice (fresh)

4 tsp tarragon vinegar

4 cloves garlic; grated

1/3 cup ginger, fresh; grated

1 tablespoon splenda or sugar

1 scant teaspoon Salt

1 tsp white pepper; ground

1 cup olive oil

5 lb green papaya (before cleaning)

2  english cucumbers

 

Remove the seeds from the pomegranates and reserve.  Peel and seed the green papaya and cut it into bite size chunks.  Peel the cucumbers and cut into bite size chunks.

 

Mix all the rest of the ingredients to make a dressing.  Toss the salad with the dressing and serve.
