1 lb bread (Baguettes, Challah)
1 1/3 cup golden raisins
2/3 cup burbon
3 cups milk
1 cup heavy cream
7 eggs
1/4+ cup sugar
1 tsp vanilla
1 orange rind, grated
1 1/2 - 2 cups cranberries
1. Cut bread into 3/4" slices or cubes. Place in large, shallow
bowl. Reserve.
2 .Pour burbon over the raisins. Warm in microwave to just above
body temperature. Reserve.
3. Beat milk, eggs, cream, sugar, and vanilla together.
4. Pour milk mixture over the bread, making sure each piece has been
wetted. Let the bread soak up the milk mixture for at least two hours,
stirring well every half hour to ensure that all the pieces of bread are
well soaked on all sides.
5.Mix raisins and any remaining bourbon into bread.
6. Butter and flour (or use Baker's Joy spray) a deep baking dish.
7. Put slightly less thatn half of the bread mixture into the dish.
Sprinkle on half of the cranberries and half of the orange zest. Cover
with the same amount of bread. Sprinkle on the remaining cranberries and
zest. Cover with the remaining bread. Sprinkle 1 Tbsp sugar over
the top.
8. Bake in 360 F oven until the internal temperature reaches 150 degrees
(about 1 1/4 hours) and the top is nicely browned.
Serve with heavy cream and raspberry or maple syrup. Can be served hot,
warm or at room temperature. |
