Two Out of Three Ain't Bad Meatloaf

1 pound lamb; ground
1 1/4 pound pork; ground
1 pound beef; ground
1 tablespoon red pepper flakes
1/8 tsp chipotle powder
4 oz Romano cheese; grated
1 cup radicchio; finely chopped
1 tablespoon thyme leaves; finely chopped
3  garlic cloves; grated
  Several gratings fresh nutmeg
2  eggs
2  egg yolks
3 1/2 oz pork cracklings; ground
  Salt; to taste
3 teaspoon white pepper; ground

Preheat oven to 350F.

In a large bowl, combine all ingredients, and mix well to make a homogenous mixture.

Spray the loaf pan with a non-stick spray.  The mixture will fill one 4" X 12: X 2 1/2" pan.  The loaf needs to cook about an hour and 15 minutes. Take it out when the internal temperature reaches 160F.  Let the loaf sit off the heat for 20 minutes (internal temperature will coast up to 170 to 175F).

This recipe yields 8 servings.  It goes great with a sliced cucumber salad dressed with olive oil and red wine vinegar.  Leftovers are good cold and freeze well.
