SPINACH BALLS - TEXAS

Spinach, 2 10-oz packages, frozen (use chopped spinach, or chop after cooking)
Pepperidge Farm seasoned stuffing m
Parmesan cheese, 2 oz., grated or g
Eggs, 6 slightly beaten
Butter, 3/4 cup, soft

Cook spinach according to directions on package.  Drain extremely well.  Combine all ingredients and mix well.  Form 1/2 inch diameter logs.  Freeze, wrapped in heavy duty plastic wrap.  When you are ready to use them, thaw slightly and slice into 1/2 inch rounds.  You can shape the rounds into balls, or leave as is.  Place on ungreased cookie sheet.  Bake at 350 F until lightly brown (about 20 minutes).  Serve hot or cold.

[Try adding sorrel to the spinach.  You can also add herbs such as oregano, chopped sauted garlic or onions.]
