Fried Smelts

2 lb smelts, dressed
1 cup bread crumbs, fine, dry
1/2 cup parmesan cheese, grated
1/4 tsp salt
2 eggs, lightly beaten
lemon quarters for garnish

Combine bread crumbs, cheese, and salt.  Wash and dry fish well. Dip the fish into the egg and then into the bread crumb mixture. Set fish on a rack and allow coating to dry for at least 15 minutes.  Deep fry fish in 360 F degree oil.  Drain on paper towels. Egg and bread crumb mix not used for fish can be combined into prune plum size dumplings and deep fried - hush
puppies.
