Radish, Scallion & Swiss Cheese Salad

Parsley, 1/2 cup 
Radishes, 1 lb 
Swiss cheese, 1/2 lb 
Scallions, 4 oz 
Olive oil, 3/8 cup 
Balsamic vinegar, 1/4 cup 
French mustard, 1 tsp or more 
Salt & pepper 

In a food processor, chop parsley, shred radishes, shred Swiss cheese.  Slice the scallions.  Make a dressing by mixing the oil, vinegar, salt, pepper and mustard.  Toss the salad and dress with the dressing right before serving.  This  is a very different and super-wonderful salad.
