Texas Pralines
Sugar, 2 cups
Salt, 1/8 tsp
Buttermilk, l cup
Baking soda, 1 tsp
Pecans, 2 1/2 cups
Butter, 2 Tbsp
Combine all EXCEPT pecans
& butter in a heavy saucepan. Cook over high heat about 5 minutes,
stir & scrape. It will foam up. Add pecans & butter,
cook over medium heat & keep stirring & scraping until it reaches
soft ball stage. Remove from heat & cool 2 minutes. Beat with
spoon until thick & creamy. Drop in spoonfuls onto waxed paper or marble.
Let cool. Makes about 2 dozen.
