Peanut Lime Dipping Sauce - Fast! |
| 2 cups peanut butter,
no additives
1 cup soy sauce 1 cup fresh lime juice 4 tablespoons rice vinegar 2 bunches coriander leaves; chopped (about 1/2 cup) 1 tablespoon brown sugar 2 tablespoons chinese chili sauce 2 kaffir lime leaves; center vein removed You can use chunky instead of smooth peanut butter, if you prefer. But it is important that the peanut butter be without sugar or salt! If you don't have kaffir lime leaves, the zest of one lime is a good substitute. Put all ingredients in a food processor and process until smooth. You may have to do this in several batches. If it is too thick, add more lime juice. You may want to add more sugar or chili sauce, depending on what you will be dipping in this. This sauce is not as good as the "Peanut Dipping Sauce, Thai", but it takes much less time to make and its easier to make large quantities. It keeps well and freezes well. |
