Tagliatelle Pasta with Hard Cheese, Wine and Truffles

1 lb tagliatelle
6 Tbsp hard cheese*, grated
3 oz butter
2+ Tbsp wine, white
1/8 tsp allspice, ground
white truffles**

* Best with a mixture of different grating cheeses, parmesan, romano, etc.

** High quality white truffle oil is an excellent substitute.  The only one we have found that is satisfactory is 'Il Tartufato' available from Salumeria Italiana, 151 Richmond Street, Boston, MA 02109.

An utterly simple feast fit for royalty (and truffle lovers).

Melt the butter in a small pan but avoid getting it really hot.  Add the grated cheeses and stir well.  Add the wine and allspice and stir again. Season with salt and pepper.  Do not reheat. Cook pasta. Mix well with sauce. Garnish with sliced truffle or a little white truffle oil at the table.
