Mochiko Pudding

1 lb mochiko
2 1/2 cup sugar
2 teaspoon baking powder
1/2 cup butter; melted
3 cup whole milk
5  eggs; beaten
2  lemons, zested
1 teaspoon vanilla
1 cup coconut; shredded
1 cup berries or berries in syrup
1 cup heavy cream

Preheat electric oven to 350 F.

If using fresh coconut, break it open, pry out the meat, peel off the brown outer coating and grate. If using dry coconut, be sure to use unsweetened coconut flakes.

Grease a 13 x 9 x 2-inch pan.

Beat eggs.

In a large bowl, combine mochiko, sugar, and baking powder. Add melted butter, milk, eggs, lemon zest, vanilla dn coconut. Mix well. Pour into prepared pan. Bake for 1 hour; cool.  Serve with fresh berries or berries in syrup and a little heavy cream on each serving.

Makes 12 servings.
