Green beans, fresh
4 Tbsp Sesame seeds,
white
1 Tbsp Sugar
2 Tbsp Soy sauce
dash of sesame oil, regular
or hot according to taste
Bonito flakes, dry
Boil beans briefly in
salted water until cooked but still crisp. Quench
in cold water.
Drain. Cut beans in halves or thirds.
In small pan, toast sesame
seeds until they begin color -
you want a nice tan color,not
dark brown!.
Put the seeds in a mortar
(suribachi) and crush coarsely.
In a bowl, mix sesame
seeds, sugar, sesame oil and soy sauce.
Toss with beans, sprinkle
with bonito flakes and serve at room
temperature.
Variations: Walnuts or
peanuts or black sesame seeds can be used instead
of sesame seed.
If the black seeds are used, add 2 Tbsp mirin instead
of the sugar.
