Lemon, Lime Or Orange Squares With Citrus Oil And Oatmeal |
| 1 1/2 cups unbleached
all-purpose flour
1 tsp baking powder 1/2 tsp salt 1 can (14-15 oz.) sweetened condensed mil 1/4 tsp lemon, lime or orange oil 1/2 cup lemon, lime or orange juice (match to the oil) 5 1/3 ounces (10 2/3 Tbsp) butter 1 cup dark brown sugar, firmly packed 1 cup old-fashioned or quick-cooking oats Sift together the flour, baking powder and salt. Set aside. Combine the condensed milk, citrus oil and juice in a medium-sized mixing bowl. Stir with a wire whisk till smooth. Mixture will thicken. Set aside. In a large bowl, cream the butter and sugar. Add the sifted dry ingredients, then the oats; mixture will be crumbly. Pat 2 cups of crumbs into bottom of a greased 9 x 13-inch pan. Spread condensed milk mixture atop crumb layer; sprinkle remaining crumb mixture over milk layer. Bake in a preheated 350 degree oven for
30 to 35 minutes, or until bars are brown around edges. Remove pan from
oven and cool completely. Cut into small squares when completely cool,
then refrigerate until just before serving. Makes about 30 bars. Keep them
refrigerated, but let sit at room temperature for half an hour before serving.
These freeze well.
