We have started small-scale cheese making using local goat milk. This page will have a bibliography of cheese making books, links, techniques and recipes.  There won't be many recipes until we get a lot more experienced!

Ehle, John The Cheese & Wines of England & France with Notes on Irish Whiskey, 1972 (My current favorite cheesemaking book. Very readable.  Has historic recipes for obscure or extinct cheeses. It isn't neccesarily easy to turn the directions and discussion of specific cheeses into a real recipe.)

Pearl, Anita May Completely Cheese: The Cheeselover's Companion 1978 (Classification of cheeses, discussion of cheesemaking.  Half of the book is recipes using cheese.)

Thear, Katie Home Dairying, 1983, (Good basic information on setting up and running a home dairy. Recipes are for one and two gallons of milk. This is the book I turn to first when planning a cheese recipe.)
