Bread Dumplings


BREAD DUMPLINGS   (KTK BEST!!!)

5         oz                  bread, with crust, in small dice
5         oz                  bread crumbs
1         medium         onion, finely chopped
2                               eggs
2         Tbsp              milk
2         Tbsp              fat
4         Tbsp             parsley, scallion tops, coriander,
                                salt & pepper
3         rashers         cooked bacon (optional)

Semmelknoedel

Fry onion in fat until barely colored.  Put diced bread and breadcrumbs
into bowl and mix.  Pour onions and fat over bread.  Mix until all is
wetted. Beat milk with eggs and pour over bread mixture.  Add salt &
pepper. Mix.  Let rest so that liquids are uniformly absorbed (10 -15
minutes).  Add greenery and chopped bacon; mix.  Mixture should be a firm,
slightly oily dough.  If not, add breadcrumbs or milk to adjust.  let rest
five minutes.  Forminto six tangerine size balls and let rest an additional
5 - 10 minutes.  Cook 8 - 12 minutes in boiling salted water.  Serve
immediately.  Will freeze after cooking and can be reheated: saute in
butter until browned.
