Baked Rice Pudding


1 1/2 cups rice
3 1/2 - 4 cups milk or rich goat milk
1 cup heavy cream
grated rind of 1 lime
1/2 cup raisins (or other dried fruit)
1/3 cup sugar
grated rind of an orange or lemon
2" vanilla bean
2 egg yolks
1/4 tsp. mace
1/2 tsp ground cardamom
3/4 tsp cinnamon

Bring 3 1/2 (more with short grain rice) cups milk to boil with sugar, grated peels, spices and vanilla.  Add rice and let stand 30 minutes until body temperature. Add dried fruit.
Beat egg yolks with remaining milk and/or cream. Mix into milk-rice mixture.
Pour into buttered baking dish and bake, covered, in a 300 F. oven until milk is fully absorbed and rice is tender.  This will take 2 1/2 to 3 1/2 hours.
If it looks like milk will be gone before rice is tender, add additional hot milk.  When rice is tender,uncover and increase heat to brown top.
Serve with whipped cream and/or fruit compote, e.g., raspberries, or raspberry syrup.
